Recipes....

I enjoy seeing recipes on blogs b/c I love to eat, cook, and try "different" recipes. Although, I have never felt compelled to post any myself....Until now!

If you like Greek style food and dips, then this is the recipe for you.


Layered Greek Dip: courtesy of BHG


1 8oz cream cheese, softened

1 Tbsp. lemon juice

1 tsp. dried Italian seasoning

3 garlic cloves, minced

1 container original hummus

1 cup chopped cucumber

1 chopped tomato

1/2 cup chopped pitted Kalamata olives

1/2 cup crumbled feta cheese

1/3 sliced green onions

1. beat cream cheese, lemon juice, Italian seasoning, and garlic until smooth

2. spread cream cheese mixture on bottom of dish (9-inch pie) , spread hummus on cream cheese mixture, top with veggies and feta

( I chop all my veggies and put in a bowl with feta and drizzle just a little EVOO on top, mix it up then pour on dip mixture)


It is really good served with Wheat thins or Whole grain tortilla chips.


Just another real quick after school snack I have been making for my kids .... as Dawson calls them "fire" ants on a log. I usually put the traditional raisins on them but opted for cranberries instead. Dawson corrected me by saying " no mom, these are Fire ants on a log"


SO, fire ants it is.....

After drooling over the loft.... Eddie and I had dinner at the Melting Pot then came back and had petite cheese cakes with chocolate covered strawberries on top.....yum!
FYI: I can't figure out how to post more than 4 pictures....hence the 2 post.

Part 1 : 8yr Anniversary



So, I have to brag on Eddie a little bit. My husband who is the "king of no surprises" ;) surprised me BIG time this weekend for our 8yr Anniversary ( it only took me **8** years...right) kidding aside he was so sweet ( and sexy...I might add) to do this for me.

He's back to school....

Another year has begun....this year is going to be "the real deal" so to speak ;)
Homework EVERY night and lots and lots of learning......I am excited to see whats to come in this new year.
He did great on his first day....he makes it so easy on us! I am very fortunate that he has no problem making friends and being around ppl. Their were about 4 or 5 kids in his class that were crying and not wanting their parents to leave....I don't know how I would handle it if Dawson was like that. Im sure my day will come though (Avery is a different story).
Also wanted to share some more pictures of Myles....couple of my favorites

Meeting Myles......

So, we finally got to meet sweet Myles... I even got to take some fun pictures of him like this one in a basket......more to come soon ;-)

and this little man goes back to school Monday....going to be a big 1st grader! We just found out who his teacher is and that one of his friends will be in his class again this year.
