Unfortunately, I know them all too well. ; )
So in order to find some motivation.... I made my favorite breakfast! Sounds strange...I know...but this dish makes me happy....even on day like this.
all you need is a couple slices of bread (I used baguette) , cottage cheese, pine nuts , fresh basil, and tomato.
mix the last four ingredients together, add S&P, and top with the toasted bread slices.
Then eat every - single - bite!
